Ginger Bread Men

Icing
1 egg white 125 grams unsalted butter
1/2 teaspoon lemon juice
1/3 cup soft brown sugar
1-1/4 cups icing sugar
1/4 cup golden syrup
assorted food coloring
1 egg, lightly beaten
2 cups plain flour
1 tablespoon ground ginger
1 teaspoon bicarbonate of soda
1 tablespoon of currants

Preheat oven to moderate 180c degrees. 
Line 2 or 3 oven trays with baking paper. 
Using electric beaters, beat butter, sugar, and syrup in a small mixing bowl until light and creamy. 
Add egg gradually, beating thoroughly after each addition. 
Transfer mixture into large bowl, sift dry ingredients onto well floured surface and 
knead for 1-2 minutes or until smooth. 
Line a large chopping board with baking paper, 
roll out dough on board to 5mm thickness (flour rolling pin if necessary to prevent sticking), 
refrigerate on board for 15 minutes so dough is firm to cut. 
Cut dough into shapes with a 13cm gingerbread man cutter. 
Press remaining dough together and reroll. 
Cut out shapes. Place biscuits on prepared trays. 
Place currants as eyes and nose on men. Bake for 10 minutes or until lightly browned. 
Cool biscuits on trays. Icing: Place egg whites in small dry mixing bowl, 
using electric beaters beat egg whites until foamy. 
Add lemon juice and icing sugar gradually. Beat until thick and creamy. 
Divide icing into several bowls. Tint mixtures with desired food colors. 
Spoon mixture into small paper icing bags. Seal open ends. 
Snip tips off piping bags. Pipe faces and clothing onto gingerbread men. 
When icing is completely dry, store in an airtight container in a cool dry place for up to 3 days.

Stained Glass Cookies


Make basic ice box cookie dough, and chill
Lifesavers candies

You'll also need plastic sandwich bags (one for each color) and a rolling pin 

Pinch off small pieces of dough and roll into strips about 1/4" thick. Use to make outlines on a foil-covered cookie sheet. Pinch ends together well. Start with simple shapes and then try more complex ones. 
Sort the Lifesavers into plastic bags by color. Crush them with a rolling pin. Use to fill openings in the cookies. 

If you want to hang the cookies on your Christmas tree, thicken dough at the top and punch a hole with a straw before baking. 

Bake at 375 F for 8-10 minutes until lightly browned. Cool completely, then peel off foil. 

Snowball Cookies

1 c Butter or margarine
1/2 c Sugar, powdered; sifted
1 teaspoon Vanilla
2 1/2 c Flour; sifted
1/4 teaspoon Salt
3/4 c Pecans, chopped

Cream butter in large bowl. 
Add sugar, cream until light. 

Stir in vanilla. 

Sift flour and salt; mix in. 

Stir in nuts. 

Shape into balls. 

Place on ungreased cookie sheet. Bake 15 minutes at 350. 

Roll in powdered sugar straight out of oven. Roll again when cool. 

Makes about 36 cookies 

 

Coconut Jelly Balls 

3/4 cup cake flour 
2 teaspoon baking powder 
1/4 teaspoon salt 
1 tablespoon shortening 
1/2 cup sugar 
1 egg 
1 1/2 cups coconut 
1/4 cup evaporated milk 
1/2 teaspoon vanilla 
1/2 cup tart jelly 

Sift flour, measure, and sift three times with baking powder and salt. Cream shortening. Add sugar gradually and cream until light and fluffy. Add egg and beat until light. Add 1/2 cup coconut. Add dry ingredients alternately with milk. Beat after each addition until smooth. Add vanilla. Pour into well-oiled muffin tins. Bake in moderate oven (375 deg. F) 20 - 25 minutes. Beat jelly with a fork until of spreading consistency. When cakes are cool, spread top and sides with
jelly. Roll in 1 cup coconut. 8 servings.

Pecan Balls 

1 cup butter 
1/4 cup sugar 
2 teaspoons vanilla 
1 to 2 cups pecans, broken 
2 cups flour 
3/4 teaspoon salt 

Mix in order given. Form dough into small round balls and bake. Lift the balls from the baking sheet and roll in confectioners' sugar until heavily coated. Time - 30 minutes. Temperature - 275 degrees F., then increase to 325 degrees F. and bake 10 minutes longer. Amount - 4 dozen

Chocolate Marshmallow Balls 

2 cups chopped nuts 
18 marshmallows, halved 
1/2 cup cocoa 
1/2 cup sugar 
1 cup Pet Milk (evaporated milk) 
Mix cocoa and sugar in top part of double boiler; gradually stir in milk. Place top part of double boiler over boiling water in the bottom part; cook for 10 minutes after water again boils, or until mixture thickens. Stir now and then. Remove from heat; keep over hot water. 
Using 2 forks, dip the marshmallow halves, one at a time, into the chocolate mixture. Remove at once and roll in the chopped nuts. Chill on waxed paper.

Butterscotch Sticks 

1 cup flour 
3/4 cup brown sugar 
1/4 teaspoon salt 
1 teaspoon baking powder 
1 teaspoon vanilla 
1/4 cup butter 
1/4 cup milk 
1/2 cup chopped nut meats 
1 egg 
Sift the flour; measure. Sift all dry ingredients together, add remaining ingredients and beat all together for 2 minutes. Spread thinly on greased cookie sheet and bake. After taking from the oven, cut into strips while still hot and roll in confectioners' sugar. Time - 20 minutes. Temperature 350 degrees

Snow Man Soup
The Soup:
1 package hot chocolate mix
3 Hershey Kisses
15 (or so) marshmallows
1 candy cane
Put the above items in colored plastic wrap

the Poem:
Put on paper and give with items in a mug
Was told you've been real good this year
Always glad to hear it
With freezing weather drawing near
You'll need to warm the spirit
So here's a little Snowman Soup
Complete with stirring stick
Add hot water, sip it slow
It's sure to do the trick!

Vanilla Nut Roll 

1 can Eagle Brand milk (sweetened condensed milk) 
1 cup coconut 
2 cups pecans, chopped 
1/2 package vanilla wafers, crushed 

Mix together well. Divide into sections and roll out logs or press into a square pan. Roll logs in powdered sugar or sprinkle powdered sugar over mixture in pan. Chill and slice.
